Corn Meal Gravy
2 to 3 tablespoons of yellow cornmeal
1/4 to 1/2 cup of bacon grease
1 can of Cream and equal water or 1 to 2 cups of milk
1 pinch of salt
1 pinch of coarsely ground black pepper
Start with a old well seasoned black cast iron skillet
Add bacon drippings to pan, let heat up to slight sizzle
Keep the fire,or pan temp to low heat
Add cornmeal into pan of drippings
Stir with fork,let turn lightly golden brown
Add cream or milk your choice
Allow mixture to thicken
Continually stirring
Add salt to taste
Add pepper to taste
Mixture will slightly bubble
Watch out will be hot!!
After Gravy mixture thickens
Allow to set on heat covered,for a few minutes.
Keep it covered,until ready to serve.
Remember this is like a Gravy mixture
Also these measurements can be changed to family size.
Use larger pan,to increase serving size.And double the ingredients where needed.Season to taste....
Yummy,you can use other flavors,for dripping,such as chicken,sausage,hamburger,etc...
Serve up in a bowl, add sugar if you wish

if needed to suite your family.It taste good on a cold morning,or cold night.I grew up many times asking my mother to make me cornmeal gravy.It sets good beside a bowl of brown pinto beans.And perhaps some spinach or turnip greens with a hint of bacon seasoning.And must be served with Love.As so many meals we grew up to Love.Our mother or our Granny made this dish for us.Some may associate this with poor living,or hard times.But, a meal made for your family, and served with loved, are the ones most enjoyed.And those will be the ones most remembered and treasured.So,enjoy and God Bless.....
