Not sure of the spellin. Skin turtle and save any yellow eggs that might be inside and biol the meat for hour or so till tender ,while thats going take a big iron pot and put grease in it and add flour and salt perrer and cook slowly till the flour is browned but not burnt (roux) then add 1 diced onion 1 diced bell pepper 3 celery stalks diced to the roux and that will stop it from browning cook till onions are clear then add 2 cups wine (red) or water mix well then add a big can 12oz tomato sauce and a big can of rotels now add meat and cook med for 30 min then add the eggs cook 15 more min. and serve over rice .Snappers are the best but the stripped faced ones are good too.Watch them snappers THEY WILL GET YOU!

I do enjoy good turtle soup. My uncle makes some from a recipie he remembers from my great uncle but I`m sorry to say my great uncle didn`t share the complete recipie couse it jest don`taste the same.Hit be darn close but sumptin`s a missin.
