I use to can a lot of meat, and after a while, just cutting it up in squares got pretty boring. So I decided to get creative. Take a hind quarter that you can cut a good size 1/2" steak off of, pan sear to give it some color and a bit more flavor.. Chop apples, nuts, celery, mushrooms. onions or what ever you would like to stuff the meat with. Lay the meat flat out and spread your chopped items on top, slowly roll the meat, keeping the stuffing in place, tie with string. Slide the rolled meat into a wide mouth canning jar, add salt and I like to add butter or some bacon fat too. Process 90 minutes at 15 lbs. (better check the lbs. it has been so long since I canned that 15 might not be correct. But I know the 90 minutes is. You can either take the lid off and place the jars in the oven covered with foil, heat 45 minutes or nuke it. (better in the oven) Just a little something special for a change. I got invited to a pot luck dinner not long after moving to western oregon. I was so excited about making some great bear tacos from the bear we bagged only a few week prior. I tried one before we went and man, they were so good. We went, but no one told be it was a vegetarian pot luck. We ate good tacos for a few days so it was to our advantage.

sounds good. i had to work with a vegetarian one time,just for one day.he was a inspector.was to ride around with me all day to make sure i knew how to do my job.he kept calling me a FLESH EATER.like it was something evil.i finally had to remind him that he was the minority.that the whole world was FLESH EATER and only a small handfull are vegetarian.never seen him again

If we were not supposed to animals, then why are they made out of meat? ;D Another thought, vegetarian is actually a native word. it means "Lousy Hunter" Jon
