Looks like a BIG 'OL CARP. Dont clean it, just fillet off a coupla slabs. Otherwise it taste's muddy.

looks like a buffalo. could be one of them big head carp that's been invading the U.S if it has more white meat than red I'd say buffalo. you can eat it has a strong fishy taste.

make sure ya cross hatch cut those fillets. buffalo have bones galore, unlike other fish, all throughout their meat. cutting in this manner will allow the hot grease to crystallize all them bones. the ribs are a delicacy around here.

I don't eat any fish that come out of this river. It runs so muddy most of the year and the cats taste like it. We get some big cats too, some 60 pounds for so. Big for Musselshell standards. But considering the small amount of meat that comes off of them it just isn't worth it to me to prepare them and eat them. I do like most fish, and don't mind it the taste is strong. Best fish I ever ate was sword fish. Reminded me of a ribeye. Anyway, thanks for the IDs guys!!!!!!!!!!!!!!!!!!!!!!!!!!! Have a great sunday.
