whats the best thing to use when seasoning a dutch oven? i've heard the vegetable oil will begin to get rancid. what do all you chefs use?

Howdy Killstwo.. for my dutch ovens the first choice is lard, the second best thing is crisco shortening. I've used other oils but nothing seemed to do as well. I use a few cast iron kettles and sheet iron kettles and I also use lard on them.

thanks beaudro. on another note, do you still make bows? last i talked with you, i lived in coffeyville and if i remember right...you were also a bowyer. but then....i can't always trust my memory anymore lol

Howdy killstwo! Always good to run into an old freind! Hows your buffalo going? You were doing pretty good on one the night i ran into you. I still go to coffeyville to buy pork brains, thanks for the tip! I havn't made any bows in a while, but the bois de arc is growing like crazy around here, I should start looking for some. I made two bows right after i first moved here and was getting pretty good with them. I started 50 other projects and havn't gotten back to the bows in a long time now. I'll try to post a few pics of them today. I got a darn rotator cuff problem in my right shoulder, were trying to fix without having to go through surgery. So right now I can't pull a draw knife, can't hammer on the anvil, can't scrape hides, can't even shoot! I'm hoping to get this fixed before the fall season starts up. Have you made a bow?

i know that guy thought i was crazy when i had him order those brains for me, but it sounds like we're keeping him busy with it. the buff are going well. i had 18 this year. between them and the deer i haven't had much time for shaving staves. my kindling pile was getting pretty big anyway. i did manage to mak e a little 50 lb out of white cedar that will fling my maple shoots pretty good, and a couple little bows for the boys, but thats about it. shoulder injuries are hard when your a tanner. go easy on it so it heals good for you.

This may make some people ill to think about it, but ANY oil goes rancid with time. The trick is, before you use it, get it up to a good temp (250 will work, 180 kills about anything) and let it cool back down. then cook whatever you want. Rancid goes away with enough heat.

phoenix, you're right..that is a little ill...as i cook soup in a stomach lol.....i guess you're right though. I'm also guessing 250 in a campfire would come pretty quickly. thanks, phoenix

These guys are ALL right(according to my wife, Jo). She seasons all her cast iron with Canola oil because it has no salt as is the case with Crisco shortning or Crisco oil. After coating, she heats the piece at 250 degrees until it smokes. Then let it cool on its own. She's always done it this way and it works great. We have cast pans, skillets, a kettle and a dutch that are older than most of you guys. Levi

usually Bacon grease for me. I use a skillet and a dutch all the time, and there isnt time for it to go rancid. I have used olive oil when the grease cup was empty.{ which isnt very often}
