I got this recipe from a sweet little old recipe book called BULL COOK and AUTHENTIC HISTORICAL RECIPES and PRACTICES
It encompasses everything from dressing out a deer to making wine, beer and liquor. Lots of classic recipes from famous old restaurants and stories about the dishes. They are described in the book as follows.
" The recipe for this sandwich goes way back to the time the first European people came to Minnesota, Wisconsin and Michigan. These sandwiches are still very popular today. Thay are a better sandwich for the deer hunter or wilderness cruiser than any made from bread. This wilderness sandwich actually is a perfectly balanced meal for the outdoorsman. It is an offspring of the French crepe suzette brought to North America by early French missionaries and settlers".
Take and fry a large pancake in a generous amount of bacon grease. Remove from the pan and cover the top generously with brown suger. Break up pieces of cooked bacon and sprinkle over the brown sugar. Roll up in a tight roll and tie up the roll with a piece of ribbon or leather. Then wrap the pancake tightly in paper, leather or cloth and bind securely. Put in your pocket or pack."
