I like to dice my venison up in medium size pieces, lightly flour and brown really well in a bit of bacon greese, set aside to cool.
Chop fine the onion and garlic. I always use a lot.
When the meat is cool enough to handle, run it through a meat grinder with medium size blade. I like my sandwich spread to have texture and not be like a pate.
Add onions, garlic salt and pepper to taste, when totally cool ad mayo and mix. The more you darken the meat, the more flavor the spread will have. I like to add relish sometimes too. enjoy

Sounds great! I grind a deer roast from the crockpot (after chilling), then mix in dill relish, onions, and mayo. Goes great on homemade sourdough bread.
Got my first deer of the season last week; can't wait to get back out next weekend.
